Back Again
Five months is a really long time. What it means is that I have not written at all throughout this entire semester. But the semester has a month left in it yet and I will write as often as I can.
In order to make up for my negligence I offer a beautiful recipe as expiation. It is the recipe for an Apple Sauce Cake which we made in practical class recently. The recipe provided wasn't all that great, but I have always had a flair for 'minor alterations'.
The resultant cake was what one of my classmates described as "Christmas in the mouth!" and even the greatest dessert haters (Yes. They exist!) could not resist it.
It is a dense, sticky plateful of sinfully rich goodness.

APPLE SAUCE CAKE
Ingredients:
FOR CAKE
- Flour 300 g
- Castor Sugar 200 g
- Butter 100 g
- Egg 3 nos.
- Dark Chocolate (Chopped ) 200 g
- Baking Powder 1/2 tsp
- Baking Soda 1/2 tsp
- Raisins 100 g
- Walnuts (Chopped) 100 g
- Cinnamon Powder 1 tsp
- Salt 1 tsp
- Apple Sauce 100 ml
- Toffee Sauce 150 ml
FOR APPLE SAUCE
- Apples 5 nos
- Sugar 50 g
- Water 100 ml
FOR TOFFEE SAUCE
- Sugar 60 g
- Butter 30 g
- Fresh Cream 60 ml
Method:
- To make Apple Sauce, core and roughly chop the apples.Then poach in sugar and water till mushy. Pulse it in a food processor till smooth sauce is obtained. Cool.
- To make Toffee Sauce, caramelise the sugar in a pan till golden brown. Whisk in butter. Take off flame and whisk in cream. Cool.
- Combine Walnuts, Raisins, Chocolate, Salt, Baking Powder and Baking Soda with the flour and keep aside.
- Cream the butter and sugar till sugar dissolves.
- Add eggs one at a time and continue whipping till the last egg is incorporated.
- Whisk in the Toffee Sauce and Apple Sauce.
- Fold in the dry ingredient mixture gently.
- Pour batter into greased cake tins immediately and bake at 180*C for 20-30 minutes, till the top is firm and dark brown in colour.
- Cool, demould and serve warm.
- Garnish with toffee sauce and caramelised apple slices.
